‘If AI were asked to make miso, it would taste like this’: the best (and worst) supermarket miso, tasted and rated

#AI #hope #Kimchi #past #Scotland #UK #water

We ran supermarket pastes through the ‘soup test’ to find out which ones have an authentic flavour and which are nothing like the real thing• The best supermarket kimchiMiso is a simple product that’s traditionally made by fermenting pulses (usually soya beans) with salt and koji, typically a grain (rice or barley, and more recently oats, say) inoculated with Aspergillus oryzae mould.

Bar one fabulous exception, however, our supermarkets seem to have flipped the “you get what you pay for” adage on its head when it comes to miso: the least authentic and most processed products in this test were also some of the most expensive, even though they’re little more than synthetic imitations cut with thickeners, colourants, acidulants and preservatives.I asked my friend Jono Hope from Slow Sauce, a miso and shoyu brewery in Scotland, for advice, and he told me not to taste it straight from the jar; its intense, salty flavour would ruin my palate.

Instead, he advised mixing a teaspoon with warm water, then drinking it – “the soup test”. Continue reading...

As King Charles heads to the Caribbean, he should know that Winston Churchill admitted to imperial plunder 90 years ago

#Barbados #Force #government #history #investment #Justice #King Charles #leader #Mia Mottley #opposition #Politician #politicians #politics #race #UK #Winston Churchill

Kenneth Mohammed | Modern politicians play on tales of empire to exaggerate what Britain left behind, but the monarch should consider a historical speech on the vast wealth taken awayFor us in the Caribbean, there is something surreal about Britain’s renewed nostalgia over empire. As Britain’s monarch prepares to visit the Caribbean, and at a time when we in the former colonies are demanding to have a serious reckoning with slavery and reparations, UK politicians are invoking a dumbed-down distortion of history.Rewriting the facts: the Reform MP Robert Jenrick has argued that colonies owed Britain a “debt of gratitude” for the institutions empire bequeathed them.

Jacob Rees-Mogg, a former minister in a Conservative government, has described British colonialism as “one of the greatest civilising, prosperity-creating forces the world has ever seen”. The opposition leader, Kemi Badenoch, has disputed colonialism’s contribution to Britain’s prosperity. Then there is Suella Braverman. The Reform MP suggested in July that rather than Britain paying reparations, former colonies should repay Britain for the investment and infrastructure provided under empire.

This prompted Mia Mottley, the prime minister of Barbados, to call that proposition “asinine”. At best it is historical amnesia. At its worse it is an insidious misrepresentation of facts. Continue reading...

The Letby case inquiry will lead to more blame and suspicion in the NHS – and patients will be less safe

#conviction #dangerous #deaths #evidence #history #hospital #human rights #Justice #Li #NHS #past #Police #rights #statistics #UK

Mark McDonald | I fear for what comes next because medics must be able to ask questions, raise concerns and admit mistakes. A defensive staff is dangerous for everyoneMark McDonald is a barrister representing Lucy LetbyI have been Lucy Letby’s barrister for the past two years.

I have spent thousands of hours going through the evidence, speaking to experts and examining what happened to the babies who died or became seriously unwell on the neonatal unit at the Countess of Chester hospital. I have worked with nearly 30 experts, including internationally recognised specialists in neonatology, pathology, insulin, statistics and other fields.

It may be to some an inconvenient truth, but I am convinced that Letby is innocent, and her convictions represent one of the most serious miscarriages of justice in modern British legal history. That means she was failed by the police, the NHS, the criminal justice system and, importantly, a plethora of experts who simply got it wrong. My work on the case has also raised wider concerns about the evidence and conclusions surrounding the deaths on the neonatal unit, and what the lessons being drawn from this case will mean for doctors and nurses in neonatal medicine.Mark McDonald is a criminal defence and human rights barrister specialising in miscarriages of justice Continue reading...

Brexit’s back – but are British voters ready to contemplate a reversal?

#agenda #Andy Burnham #Brexit #Brussels #David Cameron #EU #Europe #Politician #politicians #politics #UK #vote

As Andy Burnham talks up closer alignment with the EU and a poll suggests half in UK would rejoin, the B-word is back on the agendaIn February 2016, days after David Cameron announced the UK would hold a referendum on leaving the EU, he told workers in Slough not to imagine they could change their minds a few years down the line if they did not like how things panned out.

Voting to stay in or leave was a once in a generation thing, he said. “This is a decision that lasts for life.”Well times change, as the last prime minister but five could testify. A decade after Britain told Brussels where to go, Brexit is back on the political agenda.

After years in which many politicians avoided any mention of the B-word, Andy Burnham broke the omertà in his party conference speech last month, saying he would look again at Britain’s relationship with Europe. Continue reading...
